Tiramisu Yule Log “Bûche de Noël”

Our first class featuring the French traditional holiday cake was a great success. The “Bûche de Noël” yule log was given an Italian twist. The delicate chocolate sponge cake was filled with a mascarpone cheese mixture that was spiked with espresso and rum. Each student prepared and decorated an individual cake which they took home to eat or freeze for later use. Instruction was given in whimsical meringue mushrooms and marzipan leaves and berries. A colorful alternative of candied cranberries was also offered to add seasonal color to the bittersweet glaze.
